Squid
with squid ink sauce

Ingredients
(serves 4)

Squid ink
• 1 kilo of cleaned squid
• 4 or 5 onions
• 2 pieces of garlic
• Chopped parsley
• Olive oil
• Water and salt
• Garnish
• Cooked white rice
• Triangles of fried or toasted bread
Cut
the onions into thin slices, season and fry a little together
with the chopped garlic pieces in a casserole dish with oil. Season
and when well cooked, add the squid ink and dissolve with a bit
of water and salt. Mix well and put in a food mixer. Place the
sauce in the casserole and add the chopped squid. Stew for 35
minutes approximately until tender and serve accompanied with
white rice and croutons. Lastly sprinkle with chopped parsley
and serve.
