Ingredients (4 people)
4 big squids
300gm of chopped pork meat
4 pieces of garlic
1 cube of fish stock
1 glass of white wine
8 tablespoons of bread crumbs
8 tablespoons of olive oil
Clean the squid taking out all
the insides and put to one side the tentacles. Mix the meat with
the 2 pieces of garlic finely chopped, a little of the wine, the
egg and half of the fish stock. Mix well. In a sufficiently large
pot heat the oil and add the tentacles we have put to one side.
Once cooked take out and add to the mixture of meat and add the
bread crumbs. With the help of a tablespoon introduce in the squid
the mixture without filling to the top so you can insert a cocktail
stick to keep the mixture inside the squid. In the same oil cook
the squid with a low heat turning occasionally, when they are
nearly done add the chopped garlic cook until golden and add the
wine leaving a few seconds so that the alcohol evaporates and
add the cube of all the fish stock. Put a lid on the pot and leave
for 30 minutes on a medium heat.
Take out the cocktail stick before serving.
